UPSIDE Announces New Cultivated Meat Factory in Illinois

UPSIDE Foods, one of two companies with regulatory approval to sell cultivated meat in the United States, has announced plans to build Rubicon, a new factory in Glenview, Illinois, just north of Chicago. This 187,000-square-foot facility will have the initial capacity to produce million pounds of cultivated meat each year, with the ability to expand up to 30 million pounds. Chicken will be the first meat produced, but the company plans to expand to other species.


UPSIDE's current production facility, Engineering, Production, and Innovation Center (EPIC), located in California, can produce up to 50,000 pounds of cultivated meat annually and offers tours and virtual walkthroughs to the public. Leveraging insights from EPIC and named for its significance as a point of no return, Rubicon reflects UPSIDE Food's commitment to defining the future of food and is poised to become a beacon of knowledge in large-scale cultivated meat production.


The company recently made history by making the first sale of cultivated meat in the United States during an event at Michelin-starred Bar Crenn.
